The Littlegig Chef-and-Farmer’s Tasting is one of the main foodie attractions of Littlegig Festival 2017, which runs from 28-29 January 2017 at Wiesenhof Park in Stellenbosch.
Even the greatest chefs are only as good as their produce. Inspired by this truth, Littlegig has created a Chef-and-Farmer’s Tasting that pairs four celebrated chefs who are changing the way we eat, with two farmers who are changing the way that we think about food. Each chef will prepare two ‘tasting’ dishes in their signature style, inspired by the produce of these farmers.
LittleGig Festival 2017: Food Tastings
Littlegig’s founder and curator Georgia Black has invited international headline chef Rasmus Munk, to cook alongside celebrated local stars, Chris Erasmus of Foliage, Jason Lilley of Jason Bakery and PJ Vadas of The Hoghouse. These four will create a sensitive response to the fresh produce of Farmer Angus (aka Angus McIntosh) of Spier and Wayne Rademeyer of Buffalo Ridge.
The local chefs will most certainly be holding the fort on the culinary front, and are joined by Munk, who hails from Denmark. The 25-year-old is at the forefront of Nordic cuisine. He has been described by René Redzepi of Noma restaurant, voted the world’s best restaurant four times over, as one of the most talented young chefs around. His 15-seater, 45-course restaurant Alchemist, in Copenhagen, was named ‘Innovator of the Year’ by Nordic food bible, The White Guide Denmark 2016/7.
On the Menu
Munk’s contribution to the Littlegig Chef-and-Farmer’s Tasting is an “ashtray” of caramelized leeks with potatoes and dehydrated tomatoes, followed by lamb heart tartare with a blood sauce of chicken stock and cherries.
This powerhouse will assemble an array of eight tasting delights, including the three delectable mouthfuls highlighted here: crayfish, lime and ginger koeksisters with charred corn and burnt cucumber salad; seared aged beef sirloin with ale pickled onions, watercress and sesame and soy dressing; and an ‘ashtray’ of caramelized leeks with potatoes and dehydrated tomatoes.
