Chef Profile at The President Hotel

An extrovert who also describes himself as fun and creative, Craig Paterson, Executive Chef at The President Hotel, has had a passion for food since he was a young boy. From starting an unexpected career in the food industry to cooking for the Prince of Denmark and the Prince of Saudi Arabia, Paterson really has been fortunate with his invaluable food journey.

Growing up, Paterson had no idea what he wanted to do except that he always loved food.

I really got into this industry by chance. I can clearly remember the aromas of stocks and reductions. When I saw food being plated, I really fell in love and asked myself whether I would ever be able to do that.

With an impressive resume, Paterson has been privileged enough to have been at the helm of some of South Africa’s top establishments including Sous Chef at Haute Cabiere, Executive Chef at Parks Restaurant, Executive Chef at The Cape Grace Hotel, Chef Proprietor at Beluga and Sevruga, Executive Chef for Newmark Hotels Waterfront Properties, amongst others. His latest venture includes his role as the Executive Chef at the luxurious President Hotel in Bantry Bay, Cape Town, and he is hoping for big things. “I aspire to returning The President back to its former glory and more. I am passionate about change, training and creating new experiences within the hotel.”

The idea is not to stop, but to continuously look at how we can do it better with the ongoing training of staff.

What he loves most about what he does is being able to transform a raw product into something spectacular. “Food is like fashion – playing around with different colours, textures and flavours,” says Paterson. His love for cooking has earned him a chance to cook for the Prince of Denmark and the Prince of Saudi Arabia in a private villa during the Soccer World Cup, the Manchester United soccer team as well as the likes of celebrities such as Samuel L. Jackson and Celine Dion.

Too many people watch all the glamorous cooking shows and then aspire to become a chef, when in reality, the hours are long and hard.

Paterson contributes to society by sharing his knowledge and the skills of his art with others through education.

Developing people is a lot like pruning a tree – it often takes a long time but the end result is amazing. The greatest achievements are often when you are able to develop someone who, for example, starts out as a kitchen porter and see them ultimately succeed as a chef,

When not buying new cookery books or following the trends of international chefs online, despite a demanding work schedule, Paterson loves to spend time outdoors with his family, friends and a nice glass of wine.

Paterson concludes, “Be the change you want to see in the world” – a mantra which manifests in his love for food and passion for development in those around him.
