Mamma Luciana’s is large, colourful and very Italian. This trattoria has a great bar and an open kitchen with aromas sure to whet your appetite. Al fresco dining on the deck turns to long, lazy lunches and fun-filled dinners with sea-views. The menu is influenced by Mamma Luciana’s hometown of Modena in Italy and is distinctively Italian.
They have recently posted a few recipes on their website which we will feature on FoodBlogDBN. If you don’t trust your cooking skills or just want to rely on the expertise of a true Italian, why not book a table head over to Mamma Luciana instead.
Penne pasta with bacon, chilli and tomato sauce
- 400g penne pasta
- 80g pecorino cheese , grated
For the source
- 130g of diced bacon
- 1 small onion finely chopped
- Extra virgin olive oil
- Some chillies ( add as you like ) finely chopped
- 3 good glugs of white wine
- 500g 0f rosa tomatoes cut into quarters
This is a famous Italian dish, my dad used to make it fresh and literally took 10 min to make. He used panchetta – I find bacon has that crispy smoky flavor I love. And the trick is to use loads of pecorino.
For the sauce
- Add the onions and bacon in a pan with the oil and chilli. Fry for about 5min, add the tomatoes and white wine and let it cook for another 10 -12min Add more wine if needed
- In the mean time bring a saucepan of lightly salted water to boil, cook the pasta al dente , strain and mix with the sauce sprinkling a generous amount of pecorino
