A fresh, zesty cocktail ideal for summer sipping, this recipe was created with the Sanpellegrino Italian Sparkling Drinks Tonica Citrus by bartender Joshua Hendricks at Fable in Cape Town.
He chose the name to convey a sense of regal elegance that he feels suits the refined, pretty pink cocktail.
Citrus is a common ingredient used in cocktails but when used correctly it can be a stand-alone flavour profile. I really enjoy the flavour of grapefruit, but we don’t always have it behind our bar, so I wanted to figure out a way to use other ingredients to replicate that flavour. – says Josh.
Another thing he likes about this cocktail is that all of the ingredients are readily available in most cocktail bars, and it is very easy to recreate. “No ice is required; the ingredients just need to be chilled. The cocktail can be shaken before topping with the Sanpellegrino Tonica Citrus.”

- 15ml Campari
- 15ml Orange Liqueur
- 25ml Lemon Juice
