A must-watch, Nederburg’s third episode in their explosive new food and wine series, I’ll Bring The Wine has just been released – and it’s as full of flavour, love and light as the festival it’s centred around.
Travelling to Durban on the eve of Diwali, the show’s host (acclaimed food writer and restaurateur) Karen Dudley, takes us on a whirlwind tour of Durban’s famed Spice Market before getting to know the chef who is transforming the way the world thinks about South African Indian cuisine: Pashi Reddy.
“Durban’s Indian cuisine is distinct to Indian cuisine anywhere else in the world,” reflects Karen. “I love how Pashi is revering his roots and tradition whilst also wanting to spice things up a little.”
Driven by his passion to celebrate and spotlight the under-celebrated heritage found in Durban’s eclectic flavours, viewers can expect some explosive flavour combinations, deconstructed Indian favourites and a very non-traditional wine pairing. “It’s Diwali on a plate,” says Pashi.
Karen concurs: “His final dish is the culmination of so many seeming opposites – light and dark, savoury and sweet, modern and traditional, smooth and crisp – and it just works.
