Basil Cayenne Stuffed Lamb Recipe
Ingredients
- 2.5kg lamb shoulder, deboned and butterflied
- 2 tbsp coarse salt
- 4 tbsp Dijon mustard
- 1 tbsp garlic, crushed
- 2 tbsp canola oil
- 2 tbsp rosemary, chopped
- 100g prosciutto
For the stuffing
- 2 tbsp Black Mamba Cayenne Pesto
- 2 tbsp olive oil
- 1 diced onion
- 2 cloves of garlic, crushed
- 250g procini mushrooms, sliced
- 300g baby spinach, rinsed
Method
- Preheat oven to 160 degrees celcius and grease a roasting pan with oil.
- Rub meat with coarse salt.
- Mix mustard, garlic, rosemary and oil and spread inside the meat.
- Place the Prosciutto on top.
For the stuffing
- Saute onion in a pan until soft and golden.
- Add the garlic and mushroom and cook for 3 minutes.
- Add spinach and cook until slightly wilted.
- Add the Black Mamba Cayenne Pesto
- Allow mixture to cool and spread on prosciutto.
- Roll up tightly and tie with a string
- Roast for 2 hours until slightly pink inside.
