And to prove it, Matt Manning’s new One Ingredient theme is showcasing the simple egg in all its wondrous forms. If you haven’t been to one of Chef Matt’s dinners, it’s 5 courses of deliciousness – and a few you get to watch a demo and try your hand at cooking it yourself. So it’s both delicious and interactive. Funsies.

Beef short rib and wild mushroom ravioli, confit hen egg, baby spinach and cep sauce

Pan fried Kob, black radish, beetroot, apple, pressed ham hock, sauce gribiche


Dessert

Burnt Cambridge cream, strawberry and almond meringue
