Friday 30 October 2015 sees Twelve Apostles Hotel Executive Chef Christo Pretorius team up with winemaker Bruwer Raats from internationally renowned Raats Family Wines in Stellenbosch for a gastronomical adventure. Food aficionados may look forward to a delicious four-course food & wine pairing dinner in Azure Restaurant, with a selection of exceptional Chenin Blancs and Cabernet Francs.
Raats Family Wines, led by winemaker Bruwer Raats, has earned a reputation as a New World leader in the production of Chenin Blanc and Cabernet Franc, establishing these wines as international benchmarks. A great deal of effort has gone into sourcing specific soil types and old low-yielding vineyards located in the Stellenbosch, Paarl, Durbanville Hills and the Paardeberg area. All grapes are handpicked and wines made with Bruwer Raats’ extensive knowledge and attention to detail. The result is a truly distinctive showcase for South African wine and soil that has been winning critical acclaim on an international level.
Guests can take in the breathtaking Atlantic Ocean sunset from the Azure terrace while sipping on a glass of Raats Family Wines Original Chenin Blanc 2014, before sitting down for an evening of culinary delights in the award-winning Azure – the restaurant was one of only 18 fine dining spots to secure a place on the prestigious 2016 American Express® Platinum Fine Dining Awards list, for the fourth year running.
Chef Christo will serve Baked Beetroot – beetroot pancake, feta mousse, balsamic glaze and raw citrus beetroot as an Amuse Bouche, followed by Green Asparagus – whey poached asparagus, smoked buttermilk, pickled egg yolk, garden radish and roasted peanuts as the starter. The official first course will be accompanied by B Vintners Strandwolf Chardonnay. West Coast Mussels represent the second course, served with mussel velouté, curried couscous, malay spiced cauliflower, yogurt curd and hydrated sultanas and matched with Raats Family Old Vine Chenin blanc 2013.
The Chef has chosen Springbok Loin as his main course, which he will present with roast sweet potato, fermented black cherries, baby spring root vegetables, shimeji mushrooms and juniper berry jus. The Raats Family Dolomite Cabernet Franc 2014 will further highlight the rich taste of this meat dish. Manjari Chocolate – manjari cremeux, spiced blackberry ice cream, chocolate brownie biscuit, black cherry gel and fresh berries offers a sweet finale to the gourmet evening, to be enjoyed with Raats Red Jasper 2013. Petit Fours will then be served with tea or coffee.
