We’ve been promoting the Whats Cooking SA? Recipe Challenge for the past two weeks. In short, submit your favourite recipe utilising Mrs. H.S. Ball’s Chutney and you can stand the chance to win a return flight anywhere within South Africa. The competition still runs until the 29th June and to inspire you a little, we’ve added another recipe that was submitted. INGREDIENTS:
- 8 Pieces of washed and trimmed Chicken (4 thighs and 4 drumsticks)
- 1 cup Mrs H S Balls hot chutney
- 1 cup mayonnaise
- 1 med to large onion chopped finely
- 60ml sesame seeds (Toast lightly in a non stick pan)
- Fresh coriander
- ¼ cup of oil
- Salt and pepper to taste
METHOD:
- Arrange chicken pieces with the skinned side down in oven safe dish
- Season with salt and pepper
- Mix Mrs H S Balls hot chutney, mayonnaise, chopped onion and oil into a sauce and pour over the chicken.
- Cover and bake for 50 minutes @ 180 degrees, remove cover, turn over and sprinkle the sesame seeds (browned in a pan) and grill until brown and sticky. Keep a eye on the grilling process not to spoil the taste it must only brown slightly
- Plate with Rice, and peas and garnish with fresh Coriander.
