The Twelve Apostles Hotel and Spa’s 2015 food & wine pairing series will end on a high note on 27 November, when Azure Restaurant Executive Chef Christo Pretorius and South Africa’s ‘Pinot Noir Pioneer’ Peter Finlayson co-host the final evening of the year. Diners can expect to be utterly spoiled with an exclusive four-course dinner, matched to perfection with Bouchard Finlayson’s award-winning vintages. Fine dining Restaurant Azure, which recently secured its place on the prestigious American Express® Platinum Fine Dining Awards list for the fourth year running, presents the perfect ‘partner in wine’ for this celebratory evening of culinary delights.
Guests will be warmly welcomed with a glass of Bouchard Finlayson Blanc de Mer 2014, best enjoyed on the Azure terrace during what is bound to be a breathtaking sunset, before commencing dinner with Mozambique Tiger Prawns, served on a soya bean salad with avocado puree, spiced aubergine and miso dressing, and accompanied by the Bouchard Finlayson Sauvignon Blanc 2015. Chef Christo will follow this with Farmed Dusky Cob as the second course – olive oil poached, with baby gem lettuce, orange sweet potato, green asparagus and toasted almonds, and matched with the Bouchard Finlayson Missionvale Chardonnay 2013.
Moving on to the main course, Grabouw Lamb Loin will be served – poached loin, braised lamb neck, roast carrot and cumin puree, buttermilk and mint curd, garden peas, herb crumble and lamb jus. Peter Finlayson has selected the Bouchard Finlayson Galpin Peak Pinot Noir 2012 to be enjoyed with this dish, as it pairs beautifully with red meat. The indulgent menu completes with Gorgonzola Panna Cotta – walnut microwave sponge, poached pear, red wine gel and Port ice cream. Bouchard Finlayson’s Hannibal 2013, and intriguing blend of Sangiovese, Pinot Noir, Nebbiolo, Mourvedre, Shiraz and Barbera, will perfectly underline the contrasting sweet and salty notes of the dessert. Chef Christo and his kitchen brigade will then serve a selection of handmade Petit Fours, together with tea and coffee.
Owned by the Red Carnation Hotels’ Tollman family and under the leadership of Victoria Tollman and esteemed winemaker Peter Finlayson, 22 hectares of the 125 hectare Bouchard Finlayson estate in the temperate Hemel-en-Aarde Valley are currently under vine, with 50% devoted to the varietal for which Peter Finlayson is most acclaimed – Pinot noir. Finlayson’s Pinots are routinely voted the best in the country and abroad; his 2013 Galpin Peak Pinot Noir has just been announced as one of only two Pinot Noirs to receive 5 stars in the prestigious 2016 Platter’s Wine Guide, while earlier this year, London-based leading European drinks trade publication The Drinks Business gave his 2012 Téte de Cuvée Pinot Noir an elusive gold rating, as well as one of the highest scores, at the 2015 ‘Global Pinot Noir Masters’ blind tasting.
