Aubergine’s cuisine focuses on balance and aims to preserve the natural character of its seasonally sourced produce. Only the finest ingredients are used, including delicious vegetables and fresh greens from their organic garden.

Their new menu includes incredible mains, for example Pork in 3 textures, combining belly, pickled loin, black pudding and fried polenta; Springbok Shanks, with wine braised spatzle, red cabbage and pancetta aroma; and Free Range Chicken Thighs, fried with masala spices, with South Indian spinach curry and aubergine.
