- The evening begins with a starter of beetroot textures paired with creamy chevre, toasted walnuts, and balsamic. A sesame-crusted seared tuna dish follows, served with guacamole salsa, roe, and herb oil. For the main course, guests can choose between two exquisite options: a tender beef fillet mignon with shiitake mushrooms, caramelised shallots, and a rich jus, or a sous vide duck breast complemented by asparagus, cauliflower, and a soy orange glaze. To finish, a hazelnut and spiced pear crumble awaits, complete with caramel custard and mascarpone ice cream.
