Harbour House Restaurant has launched a new Americanised style sushi at the V&A Waterfront.
While authentic Japanese sushi is a delicate balance of flavours and tastes, Americanised sushi is quite the opposite, bringing bold flavours, strong colours and bigger portions – to cater to the demand from Westernized palates.
Harbour House Restaurant has kept the classics – California rolls, maki and nigiri – but incorporated new subtle flavours like cream cheese, and techniques such as tempura crunch rolls, deep-fried futo maki (slightly larger roll with tempura outside) with new-style sashimi.
Head Sushi Chef, Jason Chen, leads the team at the Waterfront establishment and trains other Sushi Chefs in the group. Young and softly spoken, he moved to Cape Town from China and has been making sushi for seven years.

A renovated sushi deck at the popular Waterfront eatery will be ready for the summer season, affording awesome views over the working harbour. It’s the perfect venue for special occasions and corporate functions.
