Three Course Dinner Recipe by Galbani – Mascarpone Ice Cream 

Imagine being able to say, “No darling, I made it myself”. Get this badboy made in advance so you can focus on your guests. You can also add other flavours like lemon, chocolate or fresh fruit puree for a twist.

Three Course Dinner Recipe by Galbani - Mascarpone Ice Cream

Ingredients

1 cup Galbani mascarpone cheese

¾ cup granulated sugar

4 egg yolks

1 cup heavy cream

1 cup whole milk

½ teaspoon vanilla extract

Method

  • Whisk sugar and egg yolks until fluffy and pale in colour.
  • In a medium pot, slowly bring cream and milk to the boil. Remove from heat.
  • Pour a little cream/milk mixture into the sugar and yolk mixture and whisk. Continue until fully combined.
  • Transfer liquid back to pot and reduce heat to low. Cook for about 10 minutes, stirring frequently until liquid thickens and coats the back of the spoon. Do not let it boil. Transfer custard to a bowl and chill for at least 3 hours.
  • Whisk mascarpone and vanilla into the custard.
  • If you have an ice cream maker: Transfer to ice cream maker and follow directions on churning. Freeze in an air-tight container overnight before serving.
  • If you don’t have an ice cream maker: Place into a freezer container and allow to freeze. Remove mixture and beat well to break down ice crystals. Refreeze mixture. Repeat this process 3 times until mixture is smooth and creamy.
