- They’ve spent the last eight years specialising in leisurely lunches, tutored tastings, and the occasional brunch. But fans of Haute Cabrière and visitors to Franschhoek this summer are in for a true dinner treat! From your table in the glass-fronted restaurant terrace, with views that sweep across the Franschhoek Valley, long summer evenings turn into starlit nights as you take in the atmosphere with a glass of Pierre Jourdan in hand.
Head Chef Charlton Prins has created our 4-course menu to bring together local ingredients, seasonal flavours, and classic French influences. Every course has been paired with a wine to complement the meal, and tell a story of terroir and local flavour. Chef Charlton Prins, who has been part of the Haute Cabrière team since 2019 and became Head Chef in 2022, pours his passion for storytelling into every dish. “For me, cooking is about connection,” he says. “It’s about bringing together the seasons, the region, and the people around the table.”
So join Haute Cabrière around the table this summer for dishes such as homemade sourdough with smoked Stanford parfait, local Franschhoek trout with asparagus and caviar, and chocolate mousse cake with salted caramel …
